Nicholas Loh, Chef de Cuisine

Culinary craftsmanship is the cornerstone of Chef de Cuisine Nicolas Loh's approach at Colony. With almost two decades of industry knowledge, he leads the team of chefs in delivering a unique a la minute dining experience for guests.

Beginning his career as a waiter in Penang, Chef Nicolas trained in the classic Western kitchens of PARKROYAL before moving to Singapore for an apprenticeship at Resorts World Singapore, where he honed his skills in both Asian and Western cuisine, particularly hand-pulled noodles. Joining Colony's opening team in 2015 as Junior Sous Chef, he has since represented the hotel at Food & Hotel Asia 2018 and contributed to culinary exchanges across Ritz-Carlton properties.

Inspired by his Penang roots and Singapore's rich food heritage, Chef Nicolas brings bold flavours and multicultural influences into Colony's menus, creating dishes that are refined yet familiar, celebrating the region's diversity.
