Nicholas Loh, Chef de Cuisine

With over 14 years of experience in the hospitality industry, Nicholas is in-charge of the daily culinary operations at Colony. 

At the age of 19, Nicholas started his career as a waiter in a restaurant in Penang. Inspired by the culinary craftsmanship of his colleagues, Nicholas decided to pursue a culinary apprenticeship at the same restaurant. He then joined the Western Banquet kitchen team at PARKROYAL Penang Resort before working for Resorts World Singapore, where he specialized in Asian cuisine and honed his skills in hand-pulled noodles. He then moved to the Pan Pacific Serviced Suites Beach Road and in 2015, joined The Ritz-Carlton, Millenia Singapore as Junior Sous Chef as part of the opening team for Colony.

Nicholas has represented the hotel in competitions such as Food&Hotel Asia 2018 and lent his expertise to other Ritz-Carlton properties through culinary exchanges or as a trainer for pre-openings.

During his free time, Nicholas likes to dine in different restaurants to check out the local food scene. To keep up with food trends, he delves into cook books and looks for inspiration on the internet.
